Ingredients You Will Need

For the Flaky Pastry Crust:

  • 1 ¼ cups All-purpose flour
  • ½ cup (1 stick) Unsalted butter, cold and cubed

  • ½ tsp Salt
  • 3 to 4 tbsp Ice water

For the Peach Filling:

  • 3 large Fresh peaches, sliced into thin wedges
  • 2 tbsp Brown sugar

  • 1 tsp Vanilla extract
  • 1 egg + 1 tbsp water (for the egg wash)
  • 1 tbsp Coarse sugar (for dusting the crust)

For the Hot Honey Drizzle:

  • ¼ cup Quality honey
  • 1 tsp Red chili flakes (or ½ tsp cayenne pepper for a smoother heat)
  • ½ tsp Apple cider vinegar

Step-by-Step Baking Instructions

1. Make the Pastry

In a large bowl, mix the flour, sugar, and salt. Add the cold cubed butter. Use your fingers or a pastry cutter to work the butter into the flour until it resembles coarse crumbs with some pea-sized butter pieces remaining. Drizzle in ice water, one tablespoon at a time, mixing until the dough just holds together. Shape into a disc, wrap in plastic, and refrigerate for at least 45 minutes.

2. Prepare the Peaches

In a medium bowl, gently toss the sliced peaches with the brown sugar, cornstarch, and vanilla extract. Let them sit for 10 minutes to release their natural sweetness.

3. Assemble the Galette

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper. On a floured surface, roll out your chilled dough into a rough 12-inch circle. Transfer the dough to your baking sheet. Arrange the peach slices in the center, leaving a 2-inch border all around the edges. Fold the edges of the dough over the peaches, overlapping the pleats.
